Erin Clarke created Well Plated as a casual hobby in 2012 while her husband, lovingly referred to as “Mr. Not So Well Plated,” was in law school. Growing up, Erin spent countless hours in her grandmother’s Midwest kitchen, learning all her cooking secrets and developing a lifelong love for food.
Erin’s signature twist on her grandmother’s recipes is to craft healthier versions of the classic dishes she recalls from her childhood. Her thoughtful adaptations make these nostalgic recipes more accessible for modern, health-conscious cooks while still delivering all the comfort and flavor we crave.
As a Madison, Wisconsin native, Erin brings a unique perspective to her creations. Her recipes often have an international flair, inspired by her frequent travels. One of my all-time favorite recipes from Erin is her Carnitas. I’ve tried several carnitas recipes, but hers stands out—though I can’t quite explain why. It’s a hit with my friends and family every time I prepare it. Another crowd-pleaser in my home is Erin’s French Hot Chocolate. It’s a decadent treat that never fails to impress.
For quick and simple meals, Erin has plenty of options that have become staples in my kitchen. Her Ground Beef and Potatoes recipe may sound basic, but it hits the spot when you’re craving comforting, no-fuss food. Her Air Fryer Chicken Thighs are my weeknight go-to. I even quadruple the spice mix and keep it handy in my spice drawer—it’s that good! Another favorite is her Korean Beef Bowl. This dish comes together quickly with minimal prep and is packed with flavor. I love serving it over rice, topped with a fried egg, and adding all the suggested veggies for a complete meal.
Erin has also released two incredible cookbooks: The Well Plated Cookbook and Well Plated Every Day. Both are staples on my kitchen shelf and make fantastic gifts. Erin’s enthusiasm and passion for cooking shine through in every recipe, making her books a joy to use and share.
